Golden Cauliflower Soup With Fresh Turmeric
This golden cauliflower soup is a bowl of healthy, creamy comfort with healing properties and easy on your digestion. Make it in the winter when you need something warming, or whenever your gut needs a little rest.
A warm, creamy, and anti-inflammatory soup packed with healing ingredients! You will get more of the powerful nutrients like curcumin and essential oils from using fresh turmeric, but it is ok to substitute powdered if you can’t find it. Don’t skip the ground black pepper, it helps to enhance absorption of the health benefits of the turmeric.
Cauliflower is so versatile and it makes a wonderful creamy soup when blended. I’ve also added in some coconut milk which helps create a rich and creamy texture, no dairy required.
Why Cook With Fresh Turmeric
Turmeric is known for its healing properties, from lowering inflammation, to anti-cancer compounds. And it gives your dishes a beautiful deep gold color. My preference is always to cook with fresh turmeric when I can find it. Fresh turmeric has more life in it:
It hasn’t been dried and powdered, so it contains essential oils and more flavor
You don’t know how long the dried version has been sitting on the shelf
Brighter floral flavor and less bitterness
The healing properties of curcumin are more potent
If you can’t find fresh turmeric in your grocery store, that’s ok. Powdered works too. Just make sure you are using a fresh source and that it hasn’t been sitting in your cupboard for many years going stale.
Ingredients You’ll Need
olive or coconut oil - to saute the vegetables
cauliflower
carrot, celery and onion, garlic - to add flavor and
fresh ginger and turmeric - our healing ingredients
salt, black pepper, cumin
coconut milk and chicken or vegetable broth
lemon juice - brightens the flavors
How to Make Golden Cauliflower Soup
Saute the vegetables
Heat a medium sized pot over medium high heat. When the pan is hot, add oil and then the cauliflower florets to the pan and sauté until the cauliflower has browned a little. Stirring frequently, about 4 minutes. Season with a little salt while cooking.
Push the cauliflower to the side of the pot, drizzle a little more oil in the middle of the pan and add the carrot, onion, celery and garlic, and sauté until softened and translucent, about 3 to 5 minutes, stirring frequently.
Add in the spices and aromatics
Turn the heat down to medium low and grate the ginger and turmeric over the vegetables, then add in the cumin, salt and pepper and stir everything to mix. This allows your spices to “bloom” and release more flavor.
Add Liquids
Pour in the coconut milk and broth, scraping the bottom of the pan to release any browned bits. Turn up the heat and bring to a boil.
Simmer
Then reduce heat to a simmer, cover and simmer for 10 minutes until cauliflower is tender.
Blend
Let the soup sit for about 10 minutes to cool slightly and then place in a blender and blend until smooth. You can also use an immersion blender too. These are a super handy tool for when you don’t want to pour a hot liquid into a blender. Pour your soup back into the pot and taste. Season with more salt and pepper if desired. Squeeze the lemon juice in.
Garnish and Enjoy!
The step most of us skip at home is to add some pretty garnishes to our bowl of soup. Chopped fresh parsley, chives, or green onions would be a nice addition.
Try some roasted chickpeas or toasted pumpkin seeds.

Golden Cauliflower Soup With Fresh Turmeric

Ingredients
- 2 tablespoons olive or coconut oil
- 1 head cauliflower, chopped (about 6 cups)
- 1 carrot, diced
- 1 stalk celery, diced
- ½ small onion, diced
- 5 cloves garlic, sliced
- 1-inch piece fresh ginger, peeled
- 1-inch piece fresh turmeric, peeled
- 1 teaspoon salt
- ½ teaspoon black pepper (about 5 turns fresh pepper)
- 2 teaspoons cumin
- 1 can (13.5 oz) full-fat coconut milk
- 4 cups chicken or vegetable broth
- Juice of ½ lemon (brightens the flavors)
Instructions

- Turn the heat down to medium low and grate the ginger and turmeric over the vegetables, then add in the cumin, salt and pepper and stir everything to mix.
- Pour in the coconut milk and broth, scraping the bottom of the pan to release any browned bits. Turn up the heat and bring to a boil. Then reduce heat to a simmer, cover and simmer for 10 minutes until cauliflower is tender.
- Turn off heat and let for about 10 minutes to cool slightly and then place in a blender and blend until smooth.
- Taste and season with lemon juice, salt and pepper. Add more stock if desired to create a thinner soup.
Notes
Optional Additions:
- Top with chopped pistachios, pumpkin seeds, parsley, chives or a drizzle of olive oil
- Substitute 2 to 3 teaspoons powdered turmeric if you can't find fresh
- Increase the amount of turmeric to boost the nutrients
- Add some curry powder or curry paste to boost the curry flavor
