Vegan Chocolate Fudge


You won't believe how rich, creamy, and chocolatey this no-bake fudge is! It tastes just like regular fudge but is dairy-free and you control the sweetness! It requires just 9 main ingredients, is super easy and quick, and lasts in the fridge for weeks.

If you want to make this non-dairy fudge recipe yourself, all the ingredients and a handy printable recipe is down below. It's made up of some dried fruit, naturally sweetened chocolate, coconut milk and surprise.... tahini!

This recipe came about because I was teaching a class about understanding your cravings (see the recording here) and I wanted to share something sweet with the group that was made from real foods and natural sweeteners. I already had a recipe for a chocolate truffle made with dates and prunes, so I used that as my base. Added in some chocolate chips for richness, thick coconut cream for that wonderful creamy fudge texture, and this recipe really hit the spot.

I played around with this recipe a bit, adding more dates, less dates, more dried plums and less, and all the versions were good.  This is a forgiving recipe so it's ok if you don't measure exactly perfectly.

What Chocolate Chips to Use

I found a date sweetened chocolate chip that was perfect for my recipe test.  I ended up trying 4 different brands of unsweetened, naturally sweetened, or regular sugar chocolate chips and they all made this fudge taste slightly different, but all still worked really well. So, you can adjust how sweet this fudge is and how much natural or refined sugars are used depending on which chocolate chips you like.  From Ghirardelli chocolate (with regular white sugar) to Just Date or Pascha  (which use dried date sugar), you can control the sweetness.

Tips for Using Coconut Milk 

Use canned coconut milk for this recipe, because you want the higher fat version. In general, canned coconut milk is better for cooking, while the coconut milk in a tetra pack is for drinking. Place your can of coconut milk in the fridge overnight to help bring the thick cream to the top. You can use the rest of the milk for a smoothie, or some other recipe.  I like Taste of Thai and Native Forest brands.

Easy Fudge Recipe Without Dairy

This fudge is dairy free, simple to make and bonus, you can feel good about eating it!  No refined sugars and secret ingredient you wouldn't expect. The dried fruit is there to provide some sweetness and the bulk of the recipe. You won’t taste them though, as the chocolate will overpower any of the date or prune taste.

Ingredients

6 dates
6 dried prunes
8 oz chocolate chips
3 tablespoons coconut oil
3 tablespoons tahini
½ cup coconut cream, (solid part from the top of the can)
Splash of vanilla, or 1 teaspoon vanilla powder like this
Pinch of Redmond Real Salt or pink Himalayan salt
½ cup cocoa powder

How to Make Vegan Chocolate Fudge

1. Soften the dried fruit

Place the dates and plums in a bowl and cover with hot water while you gather the rest of the ingredients. Let soak at least 10 minutes.

2. Melt the coconut oil and chocolate

Melt the coconut oil first in a small pot, then add the chocolate chips. Stir over very low heat until chocolate is melted. Turn the heat off.

3. Process the first half of the ingredients

Strain the dates, discard water and place fruit into food processor. Add the tahini, coconut milk, vanilla and salt and process until mixture is mostly smooth. It will look like the picture below.

4. Add the chocolate

Add half the melted chocolate and process the mixture until incorporated, then add the other half and process again. Add the cocoa powder last as that will firm up the mixture. Process again until well mixed.

5. Spread it out and Cool the Fudge

Spread your luscious chocolate fudge into a small, rimmed baking sheet. This batch does not fill an entire sheet, so I start from one end and spread it with a rubber spatula to the thickness I want, and then left the other half of the sheet empty. Put in the fridge for about 2 hours to harden before flipping onto a cutting board and cut into small squares.

Store leftover fudge in the refrigerator in an airtight container. It should stay fresh for about 2 weeks. Keep this fudge cold. It is not meant to sit on the counter too long.

Notes:  Sprinkle some big salt crystals like Maldon before serving for an even bigger chocolate flavor boost!
